Soufflé 舒芙蕾
完全是按照Carol老師的食譜完成的一道甜點,網址http://caroleasylife.blogspot.com/2010/03/blog-post_2.html#more,內容如下:
香草舒芙蕾
直徑9cm的磁碗 約做2個
材料:
蛋奶醬部份:
蛋黃1個,牛奶75g,香草莢1/5根,低筋麵粉15g,
無鹽奶油10g,
蛋白霜部份:
蛋白1個,細砂糖20g,
磁碗塗抹奶油及細砂糖各適量
事先準備工作:
1.所有材料量秤好,雞蛋必須是冰的
2.雞蛋將蛋黃蛋白分開(蛋白不可以沾到蛋黃,水份及油脂)

[一、焦糖雞蛋布丁]
a.焦糖
冷開水 15cc
細砂糖 50g
b.牛奶蛋液
鮮奶 200cc
動物性鮮奶油 50g(或 全脂牛奶40cc)
全蛋2顆 (淨重約110g)
細砂糖 35g
香草精 1/2茶匙
[二、海綿蛋糕體]
雞蛋 2顆(淨重約100g)
細砂糖 40g
低筋麵粉 50g
無鹽奶油 20g

steam egg
I searched the blog, and I followed his recipe to cook. Finally, I made it. Unbelievable it was. I steam egg many times, but I can't make it like the egg made by Japan' restaurant's chief.
